Keto Mini Bundt Cakes

Wanted a little Strawberry Shortcake 🍰 so I whipped up these little gems for the family.⠀

Mini Bundt Cakes
Ingredients:
1 1/2 cups Almond flour ⠀
3/4 cup Sweetener (this time I used Allulose)⠀
1 Tsp Baking Powder⠀
Pinch of Salt⠀
4 Tbsp Butter- Room Temp⠀
2 Eggs ⠀
4 oz Cream Cheese -room temp⠀
1 Tsp Vanilla⠀
Procedure:
In a mixing bowl add all your dry ingredients together and set aside. ⠀
Using a stand or hand mixer, blend together the butter and sweetener until the mixture is light and fluffy.⠀
⠀
Next stir in the cream cheese, and vanilla.. mix well. Add 1 egg at a time and make sure to completely incorporate everything together. ⠀
Last add in the dry ingredients, and mix it all together. ⠀
Preheat oven to 350° ⠀

I used little bundt cake molds, and baked for 15 minutes. Cut up some fresh strawberries, and made some homemade whipped cream.⠀

Cut the bundt cakes close to the bottom, and then add a layer if sliced strawberries. Pipe on the whipped cream, and then add the top piece. Sprinkle with powdered sugar, add more whip cream and a sliced strawberry.🍓

This breaded shrimp uses pork rinds as a coating instead of the usual bread crumbs, and it actually tastes better! Plus, seasoning the shrimps with spices and parmesan helped to enhance the flavor and gave it a new taste. This is absolutely love at first bite!
Servings: 1
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Ingredients:
100 grams Shrimp, shelled and deveined
1Tbsp Parmesan Cheese
¼ tsp Chili powder
¼ tsp Paprika
¼ tsp Garlic powder
¼ tsp dried Oregano
Salt, to taste
1 Tbsp Olive Oil, for frying
1 Egg, whisked
25 grams Pork rinds
1 Tbsp Mayonnaise, as dip, to serve

Procedure:
1. Prepare two bowls: one with parmesan cheese and another one with the spices.
2. Season the shrimps with the spices.
3. Add the parmesan cheese.
4. Mix until the shrimps are fully coated. Set aside.
5. Prepare another two bowls: one with whisked egg and another one with pork rinds.
6. Dip the shrimp, one at a time into the egg.
7. Finally, coat the shrimps with pork rinds.
8. Place into a plate.
9. Now, heat olive oil in a non-stick pan.
10. Add the breaded shrimps and cook until orange in color.
11. Flip carefully and cook the other side.
12. Serve with mayonnaise as a dip.

Looking for a quick morning meal fix. Then this recipe is for you. It´s easy to prepare and cook, it wouldn´t take you half an hour to do it. A healthy and full of nutrients meal, this is surely a great
option for breakfast.
Servings: 1
Ingredients:
2 Tbsp Olive Oil
1 cup Mushrooms, sliced
1 Garlic Clove, chopped
1/2 Onions, diced
1/4 Red Pepper, sliced
1/4 Green Pepper, sliced
1/2 small Cauliflower, in florets
1 tsp Coconut Aminos
1 Tbsp Green Onion, chopped
Salt and pepper
Procedure:
1) Process the cauliflower florets into rice using a food processor.
2) Heat a non-stick pan and add olive oil.
3) Add mushrooms and saute until brown.
4) Add garlic and saute until fragrant.
5) Add the onions and cook until translucent.
6) Add peppers and cook until bright in color.
7) Add the cauliflower rice and mix until thoroughly combined.
8) Drizzle with coconut aminos.
9) Top it with green onions.
10) Lastly, season it with salt and pepper. Serve.

Are you in love with cheese? Then this will absolutely be a dip that you will make over and over again! An amazing pair to nachos or crackers.
Servings: 10
Ingredients:
1 tablespoon butter
½ small onion, chopped
6 whole pimento peppers
1 cup heavy whipping cream
1 teaspoon xanthan gum
¾ cup shredded cheddar cheese
1 cup shredded Gruyere cheese
Procedure:
1. In a pot, melt your butter.
2. Add in your onions and sweet peppers, sauteing for 3-5 minutes.
3. When the onions are clear, pour in your cream and stir.
4. Whisk in your xanthan gum. If it doesn’t thicken too much, add in another teaspoon.
5. Once your cream is thick and is bubbling, slowly stir in your cheddar cheese - one small handful at a time. Make sure it melts before adding more.
6. Do the same thing with the Gruyere cheese, one small handful at a time.
7. Add salt and pepper to taste.
8. Serve with veggies, low-carb crackers, or throw on some low-carb nachos.

These keto tortillas are definitely delicious and perfect to make quesadillas and tacos combined with your choice of meat and veggies.
Servings: 10 tortillas
Ingredients:
1 cup coconut flour
4 tablespoons psyllium husk powder
½ cup softened butter, coconut oil, or grass-fed lard
¼ teaspoons garlic powder
¼ teaspoons cumin
½ teaspoons red chili powder
2 cups hot broth or hot water
Procedure:
1. Add all dry ingredients to a bowl. Mix well.
2. Add butter and/or coconut oil and mix thoroughly.
3. Pour hot broth into the bowl and stir with a spoon until the butter is melted and everything is well incorporated.
4. Roll dough into a log shape. Cut into 8 equal parts.
5. Grease a griddle, cast iron skillet, or frying pan lightly with butter or coconut oil, then heat to medium heat.
6. Shape each part into a ball. On a sheet of parchment paper, take each ball and roll out as well as you can. If necessary, use a piece of parchment paper on top of the dough, as well. If the dough tears, it is easily fixed. Just keep working with it. Your goal is to get it spread out evenly.
7. Grab a medium size pan lid, place it on top of the dough, twist, and lift. You will get perfectly round tortillas.
8. Lift the parchment paper and place the tortilla over your hand, peeling the paper off with your other hand.
9. Continue doing this until all of your dough is used. Don’t forget to use the excess dough to roll together for more tortillas.
10. Put into the hot griddle until the bottom begins to brown, then flip. Cook both sides until nice and browned, remove, and enjoy.
11. Use these to make quesadillas, tacos, and many other recipes!
